Where do Kokan Development products come from?

Kokan Development focuses on authentic regional produce, beginning with Konkan. We work around products connected to the region's farms, forests, food traditions and producer communities.

Why are some products described as forest-collected?

Some regional ingredients, such as certain forest honeys and other foods, are collected from natural forest environments rather than grown as conventional plantation crops. We use this description to distinguish the source and character of the ingredient.

Sourcing and processing

Why does the region matter?

Region influences climate, seasonality, farming practices, local varieties and food traditions. Our Knowledge Centre explains these connections so customers can understand more than just the finished pack.

Why do you talk about processing?

Processing can be an important part of turning seasonal or perishable produce into a product that can be handled, stored and used at home. Understanding the journey also helps explain what happens between harvest and the finished product.

Alphonso and seasons

Why are Alphonso mangoes harvested green?

Ratnagiri Alphonso mangoes are harvested at a mature stage, often while the skin is still green. The mango then continues to ripen after harvest and develops its characteristic colour, aroma, softness and flavour.

Does green mean the mango is unripe?

Not necessarily. Harvest maturity and eating ripeness are different stages. A mango can be mature enough to harvest while still green and can then ripen naturally after leaving the tree.

Why are some Konkan products seasonal?

Fresh agricultural produce follows natural crop and harvest cycles. Availability can therefore change during the year, while processing and preservation can make some regional ingredients available for longer.

Where can I find storage and usage information?

Product-specific storage, preparation and usage instructions should be followed from the individual product page and packaging. The Knowledge Centre provides broader guidance, while the product label is the primary reference for the particular pack you have.
