Ratnagiri Alphonso is closely associated with the Konkan region and its seasonal mango harvest. The fruit's journey from orchard to kitchen involves an important distinction: mangoes are harvested before they are fully ripe so they can be handled and transported, then allowed to ripen.
Harvesting before full ripeness
Alphonso mangoes are generally harvested at a stage that allows them to continue ripening after harvest. A mango that is ready to eat at home is not necessarily the same stage at which it was picked.
Ripening at home
As the fruit ripens, its colour, aroma, texture and sweetness change. This natural ripening stage is what many consumers associate with the eating experience of Alphonso.
Why pulp is useful
Mango pulp provides a convenient way to use Alphonso flavour outside the fresh-fruit season. It can be used in aamras, desserts, drinks and other recipes. Check the product label for ingredients and preparation details.
